WOW!
The batter is almost better than the brownies. This is from my favorite cookbook Essential Mormon Celebrations by Julie Badger Jensen.
Mud Pie Brownies
4 eggs
2 c. sugar
1 c. butter (softened)
1/2 c. cocoa
1 1/2 c. flour
1 T. vanilla
2 c pecans or walnuts
1 c. flaked coconut
1 (7 oz.) jar Marshmallow Creme
1 recipe Chocolate Frosting
Beat together eggs, sugar, butter. Beat in cocoa and flour. Stir in nuts and coconut. Pour batter into a greased 9x13. Bake at 350 for 25-30 min. While brownies are baking, make Chocolate Frosting. Remove brownies from oven. While hot, spread with Marshmallow Creme, then swirl in Chocolate Frosting
Chocolate Frosting
1/2 c butter
1/4 c. milk
3 T. cocoa
1 t. vanillla
2 c. powdered sugar
Notes: I only made half a batch, and used an 8x8 pan. As you can see, I have no art for making lovely swirls. I think the marshmallow creme was too hot. Should've let it cool a little before putting frosting on top. Mouthwateringly rich.
This is Kara eating the batter. She kept asking for "mo, peas." She has learned that if she says please, I always comply (well almost always). I wanted some too.
